“I really like the fact that it’s humanely raised and local, and of course it has a great flavor as well,” said Steuer, who has increasingly been serving humanely raised meats and locally grown produce whenever possible. “We try to do it almost exclusively. All my chickens and pork come from a farm in Indiana where they raise the food humanely. I believe we, as a country, are going back to a ‘farm-to-table’ style of eating and humanely raised is a super important part of that movement. You may pay a dollar more a pound, but the quality is there and you can always taste it. From my experience, I know there are taste differences.”
